摘要 The present invention relates to a method for making enzyme food containing mulberries and plums, and specifically, to a method for making enzyme food containing mulberries and plums, in which an extract obtained by mixing, fermenting, and aging plums and oligosaccharide is again mixed with fresh mulberries, followed by fermenting and aging. The method for enzyme food containing mulberries and plums of the present invention has a technical feature that comprises: a first step of mixing plums and oligosaccharide at a ratio of 5:5 and performing first fermentation at a low temperature state of 10-15°C for 80-100 days, thereby generating an extract; a second step of removing impurities from the first fermented extract and then aging the extract at room temperature of 10-25°C; a third step of mixing fresh mulberries and the extract at a ratio of 7:3 and performing second fermentation at a low temperature state of 10-15°C for 80-100 days, thereby generating a liquid-state enzyme extract; and a fourth step of removing impurities from the second fermented enzyme extract and then aging the liquid-state enzyme extract at a low temperature state of 10-15°C.
