摘要 The present invention relates to a red pepper paste with enhanced flavor and a manufacturing method thereof. The manufacturing method of the red pepper paste with enhanced flavor includes the steps of: producing a mixture of red pepper paste with enhanced flavor containing red pepper powder and tofu, red pepper powder, water and sugar; adding tofu to produce a tofu mixture by mixing the heated mixture obtained in the earlier step and tofu; and ripening the tofu mixture. According to the present invention, tofu or tofu powder is added to the red pepper paste to eliminate unfavorable odor ingredients unique to the red pepper paste; reduce the salty and spicy taste; and enhance the flavor and preference. In addition, vitamins and functional ingredients are added to the red pepper paste with enhanced flavor for excellent nutritional effect.
