FIELD: food industry.SUBSTANCE: before jelly mass supply moulds are treated with a mixture of c?tric acid with sugar powder taken at a ratio of c?tric acid to sugar powder being 1:(1-2) by way of uniform distribution across the inner surface of the moulds. Citric acid and sugar powder are used in the form of a bulk mixture or in the form of the mixture 50% solution in water with pH equal to 3.0-4.5; the mixture is applied by way of spray coating or greasing, respectively. The jelly mass is moulded into the treated moulds at a temperature of 65-75°C. Glycerine or melted fat is additionally introduced into the citric acid and sugar powder mixture.EFFECT: recyclable wastes decrease and the process duration reduction during goods manufacture.2 cl, 2 ex |
