The present invention relates to cheese added with whey powder, bean curd whey powder, or a mixture thereof and having anti-oxidation activity, and a manufacturing method thereof. In particular, the present invention relates to a manufacturing method of cheese having high calcium and anti-oxidation activity, which comprises (a) a step of preparing a cheese source material mixture by adding whey powder to milk; (b) a step of fermenting after sterilizing and cooling the cheese source material mixture; (c) a step of manufacturing curd by adding milk-clotting enzyme (rennet) to the ferment; (d) a step of removing whey by cutting and stirring the curd; (e) a step of mixing whey powder, bean curd whey powder, and a mixture thereof into the curd with the whey removed; (f) a step of molding with compression, and salting; and (e) a step of aging the salted curd. The manufacturing method of cheese of the present invention has a manufacturing cost reduction effect due to the reduction of an aging period by accelerating the aging of cheese through a step of adding whey powder, bean curd whey powder or a mixture thereof to milk and curd. The cheese manufactured thereby shows excellent anti-oxidation activity, and contains a large amount of pinitol having a blood glucose level drop (anti-diabetic) and a blood pressure drop (anti-hypertension) effect, which is used as high functional cheese. |
