摘要 The present invention comprises the steps of: washing 550-650 g of young chickens, and then refrigeration aging the young chickens by soaking the young chickens in ice; pouring 4-5 mal of water in a pot, heating the water until the temperature of water reaches 70-80°C, putting 70-80 young chickens which are prepared by refrigeration aging, 1-2 bottles of 1l refined rice water, 20-30 kalopanax branches having a length of about one span of an adult, and 20-30 g of salt, and then performing first heating, thereby boiling the young chickens and preparing broth; and putting 1-3 boiled young chickens, the broth having an amount corresponding to the number of the put young chickens, and washed fresh ginseng and jujube, in a cooker, followed by boiling through second heating. When the broth is boiled through second heating, at least one selected from a minor material group consisting of seafoods, vegetables, mushrooms, beef, fish cakes, tofu, fried tofu, and dumplings is put thereinto, followed by heating, thereby cooking chicken stew with ginseng. The present invention has a function as invigorating food, can give feelings of intimacy since several persons eat the chickens stew with ginseng on the spot by putting and heating minor materials according the personal taste while surrounding one pot like general stew, and can be expected to be consumed all the times of the year regardless of seasons.
