<p>PROBLEM TO BE SOLVED: To provide a water-containing chocolate being capable of being stored for a long term under a relatively high moisture condition and having tearing properties and a raw chocolate-like texture.SOLUTION: A raw chocolate-like confectionery contains 60 to 80 wt.% of chocolate, 3 to 10 wt.% of glycerin, total 10 to 20 wt.% of glycerin and one or more kinds of carbohydrates selected from a carbohydrate having a molecular weight of 212 or less excluding glycerin, and 0.5 to 3.0 wt.% of one or more thickeners selected from gelatin, pectin, carrageenan and pullulan, and the moisture content is 10 to 14 wt.%, a groove slip with a noodle ribbon form having depth with degree to which it is not cut on a surface, and it is torn by force of 50 g sec/mm or less.</p> |
