The present invention relates in particular to proteins, to nucleic acid sequences encoding these proteins, to vectors comprising these coding sequences, to a method for producing these proteins, and also to a method for converting kappa-carrageenans in beta-carrageenans using these proteins. In particular, it relates to the protein of SEQ ID No. 1 or 2. The present invention can be used in the exploitation of natural bio resources consisting of the organisms and microorganisms comprising carrageenans.
