The present invention relates to a processing method of pig trotters for roasting seasoned trotters and, specifically, to a processing method of pig trotters for roasting seasoned trotters, which is able to prevent spoilage of meat, to enrich the taste and flavor, and to provide an optimized texture for roasting while enhancing characteristic textures of the chewy skin and the tender meat of pig trotters by tenderizing trotter slices at a refrigeration temperature. |
