The method provides for heat treatment of meat between two frying surfaces under an axial pressure of 800-1100 During the heat treatment electric current of a voltage of 20-30 V and of a frequency of 0.45-0.55 Hz is passed through the meat, in doing so providing the electric osmosis phenomenon.
