The present invention relates to a preparing method of roasted sweet potato. The preparing method of roasted sweet potato includes: (a) a sweet potato pretreatment step of sorting sweet potato within a specific size range, washing the sorted sweet potato, and drying the same; (b) a sweet potato heat-treatment step of roasting the dried sweet potato and cooling the same; (c) a waving water treatment step of soaking the cooled sweet potato from the step (b) in waving water or spraying the waving water on the cooled sweet potato from the step (b), and drying the same at room temperature; (d) a rapid cooling treatment step of rapidly cooling the dried sweet potato from the step (c) at 25°C or lower and storing the same in a refrigerated condition at -10°C to -20°C; (e) a very low frequency treatment step of irradiating the refrigerated sweet potato from the step (d) with very low frequency; and (f) a vacuum packing step of vacuum-packing the very low frequency-irradiated sweet potato from the step (e). By the present invention, nutrients, the flavor, and the freshness of the sweet potato are preserved for a long time and the expiration date of the sweet potato is maximized. |
