摘要 FIELD: measurement equipment.SUBSTANCE: invention relates to the field of process control of porosity of bakery products in process of their production and may be used in finalisation of optimal mode of the technology for production of specified porosity under workshop laboratory conditions. In the method to measure porosity of a bakery product and a device for its realisation, including extraction of a porous piece of crumb, during extraction the porous piece of crumb is the entire plane of cut of the bakery product. Coherent radiation from the source arrives to a collimator, at the outlet of which there is a bundle of parallel light beams generated. Further the light beam lights the surface of the porous piece of crumb of the bakery product, which is in the working zone, forming a certain angle "?" with a normal line to the surface. Scattered light beams reflected from the porous surface are collected, and the image is built for the structure of the porous piece of the crumb in the observation plane, where they measure dimensions of pores of the crumb piece of the bakery product, at the same time the porosity is determined according to the following formula:where- total averaged area of pores in the crumb piece;- area of the porous piece of crumb.
