It is described an improved method or fermenter to carry out in simple but precise manner a measurement and/or control of the alcoholic fermentation. The fermentative progress of an organic material contained in a container and capable of generating fermentation gas is determined by the steps of
- measuring the amount of gas actually generated over time by the material;
- determining the state of fermentatation progress by comparing (or correlating) said amount with an estimate of the total gas producible by material throughout its fermentation. |
