The present invention relates to an opening and closing device of an oil drainage valve of a fryer, which is able to open/close an oil drainage valve with a simple operation from the outside of the fryer when discharging waste oil contained in an oil tub of the fryer, and, specifically, to an opening and closing device for an oil drainage valve of a fryer, in which a valve is mounted on an oil drainage port on the lower end of an oil tub of a fryer, and a lever is drawn to outside of the housing of the fryer by a withdrawing means on the valve shaft. According to the opening and closing device for an oil drainage valve of a fryer, the withdrawing means comprises a base holder, which has an interlocking unit to interlock the rotary operation with the rear part of a board bent and inserted into the valve shaft, and has long rectangular slotted slide holes on sidewalls formed by perpendicularly bending both sides of the board; a secondary holder, which has an insertion hole on the front of the board bent so as to be inserted into an opening/closing rod of the lever, sidewalls formed by perpendicularly bending both sides of a board and slide holes on the sidewalls to correspond to the sidewalls and the slide holes of the base holder, and a guide hole formed on the top part or the bottom part to be orthogonal to the slide holes thereof; an operating pin, which is combined to penetrate into the slide holes of the base holder and the secondary holder while penetrating into the opening/closing rod of the lever, induces the slide operation of the lever and prevents the separation; and a guide element, which penetrates into the guide hole of the secondary holder to be assembled with the opening/closing rod of the lever. The opening and closing device for an oil drainage valve for a fryer does not produce clearance in operation of the lever, performs a precise valve operation as the radius of gyration of the lever is fully delivered to the valve shaft, and allows to fully open when opening the valve, and to completely block when blocking the valve so as to prevent the leakage of oil. |
