摘要 The present invention relate to a method to reduce allergenicity of rice by treating protease selected from a group composed of alkalase, alkaline protease, and a combination thereof on grains. According to the present invention, by treating alkalase or alkaline protease; allergenicity of grains, especially rice, can be reduced up to 10^3. Accordingly, the present invention can significantly contribute to the prevention of allergic diseases by food causing food-allergies; especially by rice.
