Raw granular brown sugar is converted to a free-flowing, granular, product resistant to caking, by drying it, whilst agitating, at a temperature above about 140 DEG F., until its moisture content is less than 1%, preferably less than 1/2 %, by weight, the product being then cooled, whilst agitating; to below about 90 DEG F. The brown sugar may, if desired, be subjected to a preliminary drying to reduce its moisture content to about 1.5 to 2.0% by weight. The drying process may be conveniently effected in a mixer, e.g. a Hobart mixer, or in a rotary drum-type granulator, e.g. a Hersey granulator, hot air, e.g. at 275 DEG to 320 DEG F. being passed through the apparatus used, the subsequent cooling being carried out in a similar apparatus, through which cool air, e.g. at 80 DEG to 90 DEG F., is passed. The product may be screened, e.g. using a 10-mesh Tyler screen to remove oversize granules, and a 35 or 48 mesh screen to separate fines. A suitable form of drying apparatus is described.
