The present invention relates to a manufacturing method of cold rice noodles and cold rice noodles manufactured by the same. The manufacturing method of cold rice noodles includes a first step for making rice paste by soaking rice in water, adding water to the same, and pulverizing the same; a second step for aging and fermenting the rice paste; a third step for making a mixed dough by mixing starch, buckwheat flour, salt, and soda into the aged and fermented rice paste; a fourth step for forming noodles for the cold rice noodles by extruding the mixed dough; and a fifth step for primarily cooling, cutting, secondarily cooling, packing, and aging the noodles under refrigeration. The cold rice noodles according to the present invention has a taste unique to cold rice noodles and has a clean taste, is soft, and has chewy texture even though flour, gluten, and a viscosity agent are not added, prevents adult diseases by using high amylase rice, and does not contain preservatives, thereby being harmless to humans. |
