PROBLEM TO BE SOLVED: To provide a method for manufacturing chilled noodle which is easy to be loosened, excellent in texture and taste, and hardly aged.SOLUTION: The method for manufacturing chilled noodle includes dewatering boiled noodle, applying a seasoning liquid which contains an emulsion composition with a high fat content for pregelatinized noodle to the noodle to be vacuum cooled. Preferred examples of the chilled noodle include spaghetti made from salt-free raw material. |
