The invention relates to a process for preparing brown flour pasteware for the food of persons suffering from diabetes. According to the invention, the process consists in mixing coarse flour having a high content of fibres with up to 33% water as compared with the total mass, followed by mixing continuously and successively in 4 mixers, by continuous feed for 15...30 min while vacuuming the dough in the last mixer until obtaining a pressure of up to 1 at, followed by pressing at a pressure of 70...100 at which leads to a dough compaction into geometrical shapes, at desired sizes, followed by the first drying on a screen heated at a temperature of 30...50°C and by leading the pasteware to an elevator heated to 30...40°C, after which there is performed a heating on 9 levels for 40 min and another heating on 7 levels for 5...6 h, the resulting pasteware being cooled with cold air and stored. |
