The invention relates to an edible wafer in sheet form having inclusions therein of a different edible material in particulate form, the distribution of the inclusions being substantially uniform as determined by the variance of the normalized loading of inclusions expressed either in terms of number or weight of inclusio ns over a sufficient number piece of wafer sheet of standard surface area. The invention also relates to a method and apparatus for the manufacture of such a wafer in which the inclusions are uniformly dispersed in liquid wafer batter (2), the wafer batter is dispensed onto a plate (6) by means of one or more pinch valves (7) which allow batter with inclusions to pass freely therethrough and heat is applied to the plate to cook the batter to form the wafer sheet. |
