PURPOSE: A manufacturing method of a fatty acid provides a high purity branched aliphatic acid which does not contain unsaturated fatty acid groups and has excellent oxidation stability. CONSTITUTION: A manufacturing method of a high purity fatty acid includes a step of synthesizing a branched aliphatic acid by adding natural montmorillonite, alkali montmorillonite terra alba, or synthetic zeolite into 25% or less of a saturated aliphatic acid; a step of separating the branched aliphatic acid-containing monomer aliphatic acid from a trimer-including dimer fatty acid by a thin film distillation; a step of obtaining cured fatty acids by a curing process adding a catalyst into the monomer fatty acid; and a step of removing straight chain saturated fatty acids and obtaining branched fatty acids by using a multistage distillation method.
