The present invention relates to a method for inhibiting the production of histamine in mackerel by a high hydrostatic pressure treatment. The method for inhibiting the production of histamine in the mackerel of the present invention includes a step of treating the mackerel with high hydrostatic pressure to control the production of the histamine in the mackerel by inhibiting the activity of histidine decarboxylase derived from Morganella morganii and Photobacterium phosphoreum inside the mackerel. Therefore, a user can safely use the mackerel by applying the method for inhibiting the production of histamine in the mackerel by the high hydrostatic pressure treatment to mackerel fillets, and prevent histamine based fish poisoning.
