The present invention relates to a method for preparing salted semidry fish using mulberry leaf extract or used water from washing rice extract of mulberry leaves and red ginseng, and salted semidry fish manufactured by the method according to the present invention has excellent tastes, chewy textures and longer retention period compared to conventional salted semidry fish and is expected to have various functional effects by mulberry leaf ingredients penetrated to the fish or a combination of ingredients of mulberry leaves, red ginseng, and used water from washing rice. According to this, the invention can significantly contribute to a fishing industry field with health improvement of consumers. |
