摘要 PROBLEM TO BE SOLVED: To provide a baked sweet capable of obtaining a light crisp feeling such as the one subjected to sandwich baking by an oven generally used for the production of a baked sweet such as a biscuit without requiring special production equipment such as a sandwich baking machine, and further, to provide a method for producing the baked sweet and an oil composition for the baked sweet.SOLUTION: Specified amounts of an edible processing oil, a water-soluble protein stock and an emulsifier are added to a powder raw material including a starch raw material to form into a substrate raw material. Hot water is added thereto, and hot water kneading is performed to prepare a substrate. The substrate is molded and roasted to obtain a baked sweet having a porous internal layer structure such as the one subjected to sandwich baking. Further, specified amounts of an oil, a water-soluble protein stock and an emulsifier are incorporated into an oil composition for a baked sweet. It is preferable that, as the water-soluble protein stock, casein is included, and, as the emulsifier, lecithin is included.
