Dehydrated meat products are made by reducing meat to a fibrous state, incorporating the fibrous material in an aqueous matrix based on heat-coagulable vegetable protein to form a plastic mixture, coagulating the matrix, and dehydrating the mixture. The vegetable protein is exemplified by sodium proteinate derived from soya bean protein. Heat coagulable animal protein may be included in the protein of the matrix, e.g. the protein of the matrix may be sodium soya bean proteinate and egg albumen in the ratio 17/1-5/1. Edible oil, e.g. hydrogenated cottonseed or sesame oil, may be included in the mixture. Meat includes not only the flesh of mammals, but that of chicken, turkey, fish, shrimps, lobster, crab and clams. Examples are concerned with the preparations from cooked, lean beef, from cooked chicken meat, and from shrimps. |
