PROBLEM TO BE SOLVED: To provide a water activity reducing agent having a high effect for reduction of water activity, which improves the shelf life of a food product.SOLUTION: The water activity reducing agent includes two or more specific saccharides selected from four saccharides; i.e. sorbitol (A), glucose (B), xylitol (C), and erythritol (D). The combination of two or more saccharides and the percentage content of each saccharide selected from the four saccharides relative to the total content (E) of the four saccharides, i.e. (A)/(E), (B)/(E), (C)/(E), or (D)/(E), satisfy any one of the following [1] to [3]: [1] Including (A) and/or (B), and (C), and 50%≤(C)/(E)≤75%; [2] Including (A) and/or (B), and (D), and 20%≤(D)/(E)≤33.3%; and [3] Including (A) and/or (B), and (C) and (D), and 20%≤[(A)/(E)]+[(B)/(E)]≤80% and 0%<(D)/(E)≤25%. |
