<PICT:1001721/C2/1> <PICT:1001721/C2/2> The invention comprises optically active monosodium glutamate monohydrate crystals having a shape as in Fig. 2 and a cross-section as in Fig.3. The crystals are obtained by forming an aqueous methanolic solution (the methanol concentration being 60 to 95% by weight) supersaturated with respect to optically active monosodium glutamate, and leaving the solution, with or without stirring for crystallization to occur. The temperature may be lowered during crystallization.
