Soybean fermented milk using Streptococcus spp. lactobacillus starter and a preparation method thereof are provided to secure high content of genistein, daidzein and glycitein as well as cancer-preventive effects. A method for preparing soybean fermented milk comprises the following steps of: adding distilled water 2.8-3.2 times the amount of dried soybeans and dipping the soybeans at 92-96°C for 30 minutes; removing the skins and embryos of the soybeans; re-adding the distilled water 3.8-4.2 times the amount of dried soybeans and warming them up at 92-96°C; pulverizing and extracting the soybeans to obtain soy milk; homogenizing the soy milk at 140-160 bar and sterilizing it at high temperature; inoculating one or more lactobacillus starters selected from the group consisting of Streptococcus thermophilus 3 and Streptococcus thermophilus St-body-1 and fermenting the inoculated soy milk at 28-32°C for 24 hours. |
