The present invention relates to a novel lactobacillus plantarum strain: (a) in which parent strain of the lactobacillus plantarum strain is isolated from Kimchi; (b) which has 16S rRNA sequence of the first sequence in a sequence list; (c) which includes 10-50 units of β-glucosidase, 2-5 units of α-arabinosidase, and 3-10 units of α-arabinofuranosidase; (d) which expresses growth in ginsenoside-contained culture medium including ginsenoside Rb1, Rb2, Rc, Rd, Re and Rg1; and (e) which enriches 3-7 times of ginsenoside Rg3 in the ginsenoside-contained culture medium by converting the ginsenoside in the ginsenoside-contained culture medium into the ginsenoside Rg3, and to a method for preparing fermented ginseng in which the ginsenoside Rg3 is enriched using the strain. By using the lactobacillus plantarum strain of the present invention, the fermented ginseng in which the Rg3 is enriched can be manufactured without performing separate neutralization and purification processes.
