摘要 The present invention addresses the problem of harvesting a leafy vegetable having a low potassium content in a stable manner even when the leafy vegetable is hydroponically cultured on a large scale. The culture of a leafy vegetable is carried out while critically managing the concentration of a water culture medium with respect to an EC value throughout the entire culturing period and while altering the N:P ratio in a potassium-containing water culture medium to be used in the initial stage of the culturing period and the N:P ratio in a potassium-free water culture medium to be used in the subsequent stage of the culturing period. As a result, a leafy vegetable having a potassium content that is about 1/4 of the potassium content in a conventional hydroponically cultured leafy vegetable can be harvested with steady quality even when the leafy vegetable is hydroponically cultured on a large scale.
