PURPOSE: A method for maintaining antioxidation function of garlic extract is provided to maintain storage stability and to maintain antioxidation function of allinase. CONSTITUTION: A method for maintaining antioxidation function comprises a step of homogenizing allinase, surfactant, and oil. The surfactant is propylene glycol monostearate or polyglycerol polyricinoleate. Allinase is extracted from garlic. A composition with maintained antioxidation function contains surfactant and oil-coated allinase. |
