PROBLEM TO BE SOLVED: To provide a method of solubilizing or degrading a soy body structure being the core of soy intracellular insoluble protein tissue.SOLUTION: A soy body structure is brought into contact with a bacterium which solubilizes or degrades a soy body structure in neutral to acidic regions obtained by culturing it in a culture medium comprising a soy body structure as a sole carbon source, or protease obtained by culturing the bacterium in a culture medium comprising a soy body structure as a sole carbon source. A protease which solubilizes or degrades a soy body structure is produced for example by Bacillus amyloliquefaciens, or a bacterium deposited with accession number P-1390 or accession number P-1391.
