The present invention relates to an amorphous ginsenoside covered with a surfactant and a preparation method thereof. The amorphous ginsenoside covered with a surfactant according to an embodiment in the present invention comprises: 100 parts by weight of ginsenoside; and 10-200 parts by weight of a surfactant with respect to the weight of the ginsenoside, wherein the surfactant has two or more alkyl chains adhering to a hydrophilic part thereof. The surfactant adheres to the ginsenoside while surrounding the outside of the ginsenoside in an amorphous form, so that the ginsenoside is dissolved in an emulsion type in water. The ginsenoside to which the surfactant adheres has an average diameter of 0.5-30 micrometers, and the average size range of the ginsenoside is within±200% with respect to the diameter of the ginsenoside.
