PROBLEM TO BE SOLVED: To provide a hot water generator capable of suitably performing opening adjustment of a steam passage suitable for hot water at predetermined temperature. SOLUTION: The hot water generator comprises a heat exchanger 11 for heating cold water C by heat of steam S to generate hot water H, and a steam adjustment valve 17 for adjusting an amount of the steam S supplied to the heat exchanger 11 so as to make the hot water H at predetermined temperature. In a housing 50, the steam adjustment valve 17 has an adjustment valve part 55 for adjusting the opening of the steam passage 13 which supplies the steam S to the heat exchanger 11 and a driving part 53 for driving the adjustment valve part 55 by a thermosensitive element 54 which is extended/contracted according to the temperature of the hot water H. The housing 50 is mounted with a cover 51 which contacts an end surface of a thermosensitive part of the thermosensitive element 54 and covers at least a part of the outer periphery via a gap to form a part of a hot water passage 14 for deriving the hot water H from the heat exchanger 11.
