PURPOSE: A method for producing makkoli(Korean rice wine) beer is provided to enhance nutrition and health and to enjoy fresh taste. CONSTITUTION: A method for producing makkoli beer comprises: a step of dipping and steaming rice in water; a step of drying the rice by 10% or less of moisture; a step of pulverizing the rice and dipping the pulverized rice at 40-60 deg. C for 20 minutes to 1 hour; a step of adding amylase and saccharifying at 60-80 deg. C for 4-8 hours; a step of boiling the rice-saccharified liquid at 100 deg. C for 20 minutes; a step of adding one selected from the group consisting of hop, Morus alba L. flowers, and Cudrania tricuspidata flowers; and a step of adding yeast and fermenting for 4-10 days. |
