The present invention relates to a gruel composition which has excellent taste by containing pecan and other nutritious ingredients and has various colors stimulating the sense of taste; and a production method of the same. According to the present invention, proanthocyanidin contained in the pecan is flavonol glycoside among flavonoids, has an antioxidant effect 20 times greater than vitamin C and 50 times greater than vitamin E, controls an expression of Bcl-2 which is a tumor promotion factor, activates caspase-3 which is a tumor inhibiting factor, thereby offering an anticancer action by killing cancer cells according to a cycle of apoptosis; and anthocyanin contained in the pecan has a strong anti-inflammatory action and has effects of preventing hypertension, heart disease, and cancer.
