PROBLEM TO BE SOLVED: To provide a refined oil and fat where increase of an acid value even after heating is suppressed.SOLUTION: The invention provides a method of manufacturing a refined oil and fat having an acid value of 0.03 or less via a deodorization process of deodorizing a raw material oil and fat having an iodine value of 110 to 140 by blowing a steam of 2 to 5 mass% to the raw material oil and fat under a temperature condition of 220 to 260°C and a pressure condition of 200 to 600 Pa, and a citric acid addition process of adding citric acid of 10 to 25 ppm based on the deodorized oil to the deodorized oil. |
