摘要 The present invention relates to an improvement method for an extraction process of a mulberry fruit extract using a biochemical method, the mulberry fruit extract thereby, a manufacturing method of mulberry fruit granular tea using the same, and the mulberry fruit granular tea thereof; and more specifically, to an improvement method for an extraction process of a mulberry fruit extract using a biochemical method which extracts mulberry, the fruit of mulberry trees, through hydrolysis using enzymes and fermentation using lactic acid bacteria for increasing the content of nutrients including organic acid, vitamins, amino acid, polyphenol, and anthocyanin, and the content of functional compounds in the mulberry fruit extract, and producing mulberry fruit granular tea from the mulberry fruit extract; the mulberry fruit extract thereby; the manufacturing method of the mulberry fruit granular tea using the same; and the mulberry fruit granular tea thereof.
