PROBLEM TO BE SOLVED: To provide a production method of ornithine and equol, a production method of a fermentation composition containing high concentration of ornithine and equol, ornithine and equol obtained by the production method, a composition containing high concentration thereof.SOLUTION: A strain of Adlercreutzia equolifaciens DSM 19450 was cultured in a culture medium containing isoflavones and dextrin, so that high concentration of ornithine and equol was obtained in the culture medium. After filtration of the culture solution, clear filtrate was dried using a spray dryer, and powder of a fermentation composition was obtained. In the result of analysis, the powder contained 5.0 wt.% of equol, 11.8 wt.% of ornithine, and 1.69 wt.% of citrulline. |
