In making expanded maize products from maize meal, maize meal supplied by hopper 52 is moistened in chamber 48 with water from pipe 56 to give it a moisture content of 10-12.3% by weight, the moistened meal is forced under pressure by screw 31, through orifices in die plates 40, 41, at a rate of 950-1800 linear inches per minute to heat the maize meal to 250-400 ‹F. and cook and plasticize the maize meal, the cooked meal is expanded as it leaves the orifices due to the reduction in pressure, and the extruded expanded product is cut by knife 71 to give a product simulating popcorn. The cuts may be made at the rate of 1,000-2,000 per minute. The product may be coated with butter, salt, cheese or caramel. |
