Water-soluble coloured substances are obtained by mixing b -carotene with one or more water-soluble high molecular weight compounds selected from the group consisting of, polyvinyl pyrralidone, copolymers of vinyl pyrrolidone and vinyl acetate, methyl cellulose and methyl cellulose propylene glycol ether in the presence of a solvent which dissolves b -carotene and dissolves or has a chemical affinity for the said high molecular weight compound, followed by removal of said solvent. Antioxidants such as 4 - hydroxy - 3,5 - di - tert. - butyl toluene and/or a mixture of 3 - tert. - butyl - 4 - hydroxy-anisol and 2-tert.-butyl-4-hydroxy anisol may be added. The solvent is preferably chloroform, methylene chloride, carbon tetrachloride, benzene, cyclohexane, or trichloroethyline. |
