<p>An apparatus for sterilising a knife comprising a housing (2) having at least one opening (12, 13) permitting the insertion of a knife blade into the housing, at least one spray nozzle (20, 22) located within the housing for delivering a spray of hot water or steam onto the blade of a knife inserted into the housing, and a control means including a timer and a control switch (42) for controlling the discharge of the spray for a pre-programmed period of time. In one embodiment a knife support (18) is mounted within the housing which comprises a cantilevered support member pivotally mounted which is associated with the control means. The support member displaces to its lower position against a lower stop (40) upon insertion of a knife causing the initialisation of the sterilising operation. A counterweight (34) may be mounted upon the support member to bias the tilt about the pivot axis.</p> |
