摘要 PROBLEM TO BE SOLVED: To provide a cooking method of baked fish using an electronic oven in which cooking can be simply performed by an electronic oven, moreover there is not inferior in taste, appearance, and texture to those in which cooking is performed by a heating system cooking device (fish oven, charcoal fire, gas range, grill or the like).SOLUTION: A cooking method of baked fish using an electronic oven includes: a first step in which a gap is made in a first prescribed direction in a skin of an object fish that has skin and a meat side and becomes an object of baking cooking; a second step in which a gap is made in a second prescribed direction in a meat side of the object fish; a third step in which seasoning liquid is applied to a surface of the object fish; a fourth step in which the object fish is put on an exclusive tray; a fifth step in which while the object fish is mounted on the exclusive tray, and prescribed time cooking is performed by an electronic oven, the exclusive tray includes a rib projected from a bottom face; and a bottom face region other than the rib.
