PROBLEM TO BE SOLVED: To prepare a cooked bread imparting a favorable appearance and taste regardless of storage conditions of an acidic o/w-type emulsified food included therein.SOLUTION: Since an acidic o/w-type emulsified food used for the provided cooked bread bears a specified relation of the temperature and complex viscosity of the food, the cooked bread exhibits, even in a case where the food used thereby has been subjected to severe storage conditions such as temporarily abiding in a frozen state or a high-temperature state of approximately 40°C, an excellent storage stability and can prevent the oil separation and syneresis of the food following the storage thereof granted that specified conditions (i.e., temperature variation rate of first complex viscosity (TS1) and temperature variation rate of second complex viscosity (TS2) being respectively TS1=-8 to -2 and TS2=0 to 15) are satisfied by the food used thereby. |
