The present invention relates to porous rice powder obtained through spray-drying and a production method of the porous rice powder, more specifically the production method of the porous rice powder which comprises the following: a mixing step (10) of mixing 5% of rice powder and 95% of water by weight to obtain rice powder suspension; a gelatinization step (20) of gelatinizing the rice powder suspension obtained from the mixing step (10) by heat-processing at 88-92 for 28-32 minutes to obtain the gelatinized rice powder suspension; and a spray-drying step (30) of inserting the gelatinized rice powder suspension into a spray-drier, and spray-drying using 178-182 hot air to remove moisture and obtain porous rice powder. The rice is spray-dried and gelatinized to reduce the viscosity, and the damage of starch, fibers, and nutrients inside the rice is prevented. By applying the porous rice powder to various kinds of food, texture and the expansion rate of products are capable of being increased and the usage range of the rice is capable of being widened by changing the physical properties of the rice powder.
