The present invention relates to a manufacturing method of low calorie-functional fruit jam which includes functional components in regular fruits including apple, pear, peach, strawberry, or grape to obtain a fruit jam mixture, and comprises a washing and assorting step, a rapid freezing step, a thawing step, a second assorting step, a mixing step, a vacuum concentration step, and a filling and sterilizing step. The present invention has the following: a long term storage effect without containing a harmful additive to human body for enabling the long-term storage of the fruit jam; proper sweetness without containing sugar by containing maltitol, xylitol, pectin, and collagen; a weight loss effect by having low calories; and an effect in which diabetic patients can eat without burdens. Carbohydrate can be further included in the fruit jam when the fruit jam mixture of the manufacturing method contains Helianthus tuberosus for improving the nutrition of the fruit jam.
