A dry solid composition for enhancing flavour, in particular the fresh flavour of fruit and vegetables comprises acetaldehyde and a water soluble or dispensible carbohydrate of formula (C 6 H 10 O 5 ) n or hydrophilic colloid free of amine groups, for example lactose, sucrose, maltose, corn syrup solids, dextrins, partially hydrolysed starch, gum arabic, larch gum, irish moss, and carragheenan. The addition of water to the composition releases the active ingredient acetaldehyde.
