PROBLEM TO BE SOLVED: To provide a production method of refined oil and fat having reduced content of glycidol, 3-chloropropane-1, 2-diol and fatty acid ester thereof.SOLUTION: A production method of refined oil and fat according to the present invention comprises a decoloring step to decolor the oil and fat which has passed through first deodorizing step, with white clay of pH 5 to 7, and a second deodorizing step to deodorize the decolored oil that has passed through the decoloring step, at 160 to 270°C. The oil and fat that has passed through the first deodorizing step can be any one of palm oil, oil derived from palm and mixed oil thereof. |
