Provided is a fat composition which is a diacylglycerol-rich fat subjected to a purification treatment, and has favorable flavor. A fat composition in which the proportion of diacylglycerol in relation to the total amount of triacylglycerol, diacylglycerol, monoacylglycerol, and free fatty acid in the fat composition is 20 mass% or higher; the proportion of monoacylglycerol is 10 mass% or lower; and the content, in the fat composition, of fatty acid ester having a total carbon number of from 43 to less than 51 is 2 mass% or lower. |
