An egg product in the form of an elongated body of coagulated egg yolk surrounded by coagulated egg white is obtained by moulding and coagulating egg white to form a hollow cylinder, filling this cylinder with egg yolk, and coagulating the yolk. For example, the egg white may be introduced into the annular space between two concentric tubes, preferably of stainless steel, which are closed at their lower ends, coagulated by placing in boiling water, removing the inner tube, introducing the yolk, and coagulating by further boiling. The egg may be fresh or reconstituted. The product may be employed in meat products. For example a canned luncheon meat having a central core of egg is prepared by having a stainless steel cylinder of slightly larger diameter than the egg stick inserted in the empty can which is then filled with the meat, the cylinder withdrawn, the egg stick inserted, and the can thereafter closed and processed conventionally. |
