The present invention relates to a water and oil type frying machine capable of removing floating materials falling toward the boundary of water and oil while frying ingredients. The frying machine of the present invention comprises the following: a frying container including a cooling section with the lower side filled with water and a frying section with the upper side filled with oil; a heating unit installed on the lower side of the frying section for heating the oil filling the frying section; a cooling unit installed on the lower side of the heating unit for cooling a part between the frying section and the cooling section; and a filtering unit repeatedly moving between the cooling section and the frying section by a rotation movement for removing the floating materials on the lower side of the frying section. |
